How to Make Quick Crab Melts
Imitation crab may not be fancy, but it’s comfort food in my house, and one of my favorite ways to eat imitation crab is on these quick crab melts.
They come together easily in a matter of minutes. You can even save time by making the crab salad topping ahead of time.
These make a good light dinner or lunch especially during the warm summer months, but they also are warm and hearty enough that they’re perfect for the winter as well. Serve them with some fresh fruit and a pickle spear, or perhaps alongside a salad, for a complete meal.
Quick Crab Melts
Ingredients:
- 1 8-oz. package imitation crab, diced
- 3 tablespoons mayonnaise
- 1 tablespoon mustard of your choice
- a dash of lemon juice, if desired
- salt and pepper to taste
- 2 whole English muffins, sliced
- 4 slices of cheese (my family prefers provolone, Swiss, or mozzarella, but any sliced cheese is fine)
- 4 slices of a large tomato
Directions:
Mix together the crab, mayonnaise, mustard, salt, and pepper. Spoon the mixture onto each of the four English muffin halves. Top each muffin half with one slice of tomato and one slice of cheese.
Place the muffins on a baking sheet and broil on high for 2-4 minutes or until English muffins are lightly toasted and cheese is melted and slightly golden.
This recipe serves four people, or two extremely hungry people. My family finds that one muffin half alongside a salad or other side item is just the right portion size, and two muffin halves is almost too filling.
