What to do With English Muffins

English muffins are a versatile food. They’re good for breakfast (toasted and topped with butter and jam) or for dinner (topped with pizza sauce and cheese and baked). Here are my favorite ways to serve English muffins:

Who needs McDonald’s Egg McMuffins when you can easily make your own at home for a fraction of the cost? Lightly toast a split muffin and spread a little butter on both sides, then make a sandwich using a fried egg; cooked bacon, a sausage patty, or a slice of ham; and a cheese slice. Warm the assembled sandwich in the microwave for about 10 seconds to melt it all together, and then serve immediately.

These freeze well, too, after they’re fully assembled, so all you have to do is reheat them in the microwave. When my family goes camping, we make these sandwiches at home, wrap them individually in foil and freeze them, and then warm them in the campfire coals or on a portable grill at our campsite. They are especially delicious when eaten outdoors.

Top split muffins with a spoonful each of pizza sauce, a sprinkle of shredded mozzarella, and other pizza toppings such as pepperoni, cooked sausage crumbles, green peppers, etc. Bake at 375 degrees for about 10 minutes or until cheese is melted and golden.

French Toast

Instead of using traditional bread, try using English muffins the next time you make French toast. You can use your own recipe (basic eggs, milk, and a dash of cinnamon in our house), or go with something a bit fancier at this link.

Spoon your favorite tuna salad (homemade or store-bought) onto a muffin and layer on a tomato and lettuce, and a cheese slice if you want, and you’ve got an ideal lunch. For a hot lunch, leave the lettuce off and stick it under the broiler for two to four minutes.

Crab Melts

Dice an 8-ounce package of imitation crab, mix with three tablespoons mayonnaise, 1 tablespoon mustard of your choice, a teaspoon of lemon juice, and salt and pepper to taste. Spoon the crab mixture onto several English muffin halves. Top with a slice of tomato and a slice of cheese and place under the broiler for two to four minutes.
