How to Make Chocolate-Bottom Banana Squares
You’ve got a bunch of overripe bananas sitting on your kitchen counter, but you’re tired of banana bread, so turn those bananas into Chocolate-Bottom Banana Squares instead. This is like banana bread, brownies, and cake all in one, and with only a little guilt because it’s got bananas in it. How unhealthy can it be, right?
I discovered this recipe a few years ago on Tammy’s Recipes and fell in love with it. It requires an extra mixing bowl because you’re making two types of batter – the banana batter and the chocolate batter – but it’s not overly complicated. The finished product is worth it.
You can serve this dessert warm shortly after it’s come out of the oven, and the chocolate chips will be all gooey. You can serve this dessert warm and gooey after it’s just finished baking, or let it cool and cut it into squares that are perfect for packing in lunch boxes. To make this dessert more decadent, try topping servings with whipped cream or vanilla ice cream.
Chocolate-Bottom Banana Squares
Ingredients:
- ½ cup butter
- 1 cup sugar (I often use just 3/4 cup of sugar and it turns out fine)
- 1 egg
- 1 teaspoon vanilla
- 1 ½ cups mashed bananas (about 3 medium bananas)
- 1 ½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup baking cocoa
- 1 cup semi-sweet chocolate chips
Directions:
In mixing bowl, cream butter and sugar. Add egg, vanilla, and bananas, beating thoroughly.
In a separate bowl, combine flour, soda, baking powder, and salt. Add to creamed mixture and mix well.
Divide batter in half. Add the cocoa to one portion of the batter. Spread that portion in the bottom of a greased 9 x 13-inch baking dish. Spoon remaining batter on top and sprinkle with chocolate chips.
Bake at 350 degrees for 30 minutes or until toothpick comes out clean. (Keep an eye on them; mine were done after only 25 minutes.) Cool and slice into squares.
